Cowboy Bebop
Cowboy Bebop streams on Crunchyroll, Netflix, Hulu, Amazon Prime Video, Adult Swim, and Tubi — so it's almost certainly waiting inside a service you already pay for, and Tubi carries it free with ads. Shinichiro Watanabe's 26-episode 1998 space-Western is one of the easiest anime classics to track down, in either the original Japanese or its famous English dub.
About
In the distant future, humanity has scattered across the solar system, and chasing bounties is a perfectly respectable way to scrape together a living. Spike Spiegel and Jet Black work that trade from their ship, hauling in whoever's worth a paycheck and somehow never landing enough to cover the next meal. Their two-man operation slowly accretes a crew of misfits: Faye Valentine, a sharp-tongued gambler permanently drowning in debt; Edward, a feral young hacking prodigy; and Ein, an unnervingly clever engineered dog. What looks like a straightforward bounty-hunter show is really a mood piece — episodic cases that drift between slapstick, neo-noir, and aching melancholy, all riding Yoko Kanno's genre-hopping jazz. Everyone aboard is quietly outrunning a past they'd rather not discuss, and the series is in no rush to drag it into the light.

Seasons & Watch Order
Start with the 26-episode TV series — that's the whole heart of it. Most episodes play as self-contained bounties, but threads of backstory quietly build across the run, so watch them in order. The side story, Cowboy Bebop: Tengoku no Tobira, and the shorter extras are best saved for after the series, once these characters already feel like family.
